Calcium sulfate (or calcium sulphate) is a common laboratory and industrial chemical. In the form of γ-anhydrite (the nearly anhydrous form), it is used as a desiccant. It is also used as a coagulant in products like tofu. The hemihydrate (CaSO4·~0.5H2O) is better known as plaster of Paris, while the dihydrate (CaSO4·2H2O) occurs naturally as gypsum.

Gypsum is used in plaster, wall board, some cements, fertilizer, paint filler, ornamental stone, etc. Calcium Sulphate is used in Sulfur-based Fertilizers, Fillers in Paper, Flux Agents for Casting-Aluminum, Renal Flux, Driers, Pigment Extenders etc.

Calcium sulfate products are used by the food, beverage and pharmaceutical industries as an economical and FDA-approved source of supplemental calcium. Calcium sulfate is also acceptable as an additive in pigments and colorants used in food containers.

In the commercial baking industry, the calcium sulfate fillers are economical sources of supplemental calcium in enriched flour, cereals, baking powder, yeast, bread conditioners, baking powder, and cake icing. The gypsum products can also be found in canned vegetables and artificially sweetened jellies and preserves.

In the brewing industry, calcium sulfate promotes a smoother-tasting beer with improved stability and a longer shelf life.

For pharmaceutical applications, calcium sulfate is extensively used as a diluent because it makes an excellent inert extender while also serving as a dietary calcium supplement.

Agricultural Gypsum (Calcium Sulfate - CaSO4) is an organic material used to amend, condition and fertilize garden soil. Soil lacking in adequate amounts of calcium sulfate may become compacted, preventing air and water penetration. Without a sufficient supply of calcium sulfate, soil may lose its leaching ability and become overly saturated with salt or other excessive elements harmful to healthy plant development.
